It's Biscuit and Gravy time!
I must say, I am not a big breakfast person, but I do love brunch!
The reason brunch is my favorite time of day is because it's breakfast and lunch together, which means, I am getting closer to dinner.
Yes, I know my reasoning behind brunch may be flawed but I am always looking forward to dinner.
My Cheesy Green Chili Sausage Gravy with Biscuits is a dish I make for my family for brunch and/or dinner.
In this house we really don't care about politically correct eating. We eat breakfast/brunch for dinner all the time.
I purchased Pillsbury biscuits and I knew I wanted to smother them in gravy. I decided to make a Cheesy, Green Chili gravy with a little kick!
The kick being the addition of plenty of hot sauce.
Omit the hot sauce if you can't handle the heat, but we love spicy food, so I added extra.
I also used chicken green chili sausage which also adds to the kick!
It's really a simple dish, after browning up the sausages in a little olive oil, add the peppers and onions to the sausage grease, season well, broth and heavy cream, gravy complete.
Cook biscuits according to package directions, and don't forget to butter them hot out of the oven.
Smother in gravy and let's eat!
All done, I added extra cheese before serving and even more hot sauce.

Cheesy Green Chili Sausage Gravy with Biscuits

Cook Time: 30 minutes
Total Time: 35 minutes

Ingredients:
8 Pillsbury biscuits
1 lb spicy green chili chicken sausage, casing removed
2 1/2 cups chicken broth
1/2 cup heavy cream
1/2 cup jack cheese, grated
1/2 cup sharp cheddar, grated
1 onion, diced
1 cup bell pepper, diced
2 cloves garlic, minced
3 tablespoons flour
2 tablespoons butter, unsalted
2 tablespoons extra virgin olive oil, plus extra
1 tablespoon parsley, minced, fresh
1 teaspoon black pepper
1 teaspoon creole seasoning
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
hot sauce to taste
Directions:
Mix seasoning blend and set aside.
In a skillet add about 1 tablespoon of olive oil over medium heat, add fresh sausage, casing removed.
Season with about 1 teaspoon of seasoning blend, cook sausage for about 12 minutes, remove from pan and set aside.
Add 2 tablespoons of olive oil to pan, add butter and allow butter to melt.
Add onion and bell peppers to pan and saute 5 minutes, season with 1 teaspoon of seasoning blend, add garlic and cook 1 minute more.
Add broth to mixture, bring to boil, reduce heat and simmer for about 5 minutes. Season with remaining seasonings.
Whisk in cheeses and heavy cream, toss in sausage and parsley and stir
well. Allow mixture to cook over low for about 5-10 minutes, stirring
occasionally.
Taste, add hot sauce if desired, I like to add about 1 tablespoon for spice.
Serve over biscuits cooked according to package directions.
Top with more grated cheese and fresh parsley if desired!
