You can use any type of meat and/or vegetable and make your frittata extra special.
It's one of those dishes that is perfect for getting rid of extra veggies at the end of the week.
I used tomatoes, peppers, onions, sharp and jack cheese to create this beauty. I think the key to a perfect frittata is to saute the veggies before adding the eggs.
I also like to use different cheeses, goat cheese would be perfect with this dish. I went with Jack because I was all out of goat cheese, but use whatever cheese you prefer.
Bake for about 15-20 minutes at 350 degrees, allow the frittata to rest before serving.
Quick and Easy Frittata with Tomatoes, Peppers and Two Cheeses

Ingredients:
8 eggs
2 Roma tomatoes, sliced
1/2 red onion, sliced
1 cup bell pepper, diced
1 cup cheddar cheese, grated
1 cup jack cheese, crumbled
1 tablespoon Italian parsley, chopped
2 teaspoons creole seasonings
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
extra virgin olive oil
Directions:
Preheat oven to 350 degrees.
Mix seasoning blend together and set aside.
In a nonstick skillet add about 1 tablespoon of olive oil over medium heat. Add peppers and onions, season with 1 teaspoon of seasoning blend and saute for about 5 minutes.
Add sliced tomatoes to pan and season cook for about 1-2 minutes per side. Remove tomatoes from pan.
In a bowl add eggs, grated cheddar cheese, parsley and remaining seasonings, beat well.
Evenly distribute peppers and onions on bottom of pan. Pour egg mixture over eggs, do not stir. Top with tomatoes and jack cheese.
Allow mixture to set up about 4 minutes on stove over medium heat. Transfer to oven and bake around 15-17 minutes.
Remove from oven, allow to rest about 5 minutes and serve.
