If it's smothered and Creole, we all know it taste real good!
That's why my Smothered Creole Brussels Sprouts with Bacon is such a big hit in my family.
If you don't eat bacon, then you can omit it, it would still taste good, just not as good as it taste with all this bacon.
After cooking all that bacon, I sauteed my onions and peppers in the bacon grease. YEP, in all that bacon grease.
This is a special occasion meal, like a wonderful Easter side dish, so use the bacon grease!
I added a little low sodium chicken broth, covered the dish and allowed it to steam slightly, just until the veggies are fork tender.
This dish turned out perfect.
You have the crispy bacon with the tender brussels sprouts, smothered in a light broth, it really is the ultimate side dish.
You must make this, I promise you want be disappointed!

Smothered Creole Brussels Sprouts with Bacon
Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4
Ingredients:
1 1/2 lb brussels sprouts, diced
1/2 pack of bacon, diced
1/2 cup red onion, diced
1/4 cup white onion, diced
1/4 cup bell peppers, diced
1/4 cup chicken broth
3 cloves garlic, minced
2 teaspoons creole seasonings
1 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
pinch of cayenne
extra virgin olive oil
Directions:
Mix seasoning blend together and set aside.
Rinse brussels sprouts and diced into four pieces. Drain and set aside.
Place about 2 teaspoons of olive oil into a skillet over medium heat, add bacon and cook until crispy about 7-8 minutes.
Remove bacon and drain on paper napkin. Reserve bacon grease.
Add onions and peppers to bacon grease and saute for about 5 minutes. Season with 1 teaspoon of seasoning blend.
Add garlic to pan, cook 1 minute more.
Add brussels sprouts to pan, season with remaining seasonings, mix well and cook for about 5 minutes.
Add broth, cover with a lid and steam for about 5-7 minutes more or until veggies are tender.
Remove from heat, toss in bacon, and serve.
