Years ago I was watching I believe it was Martha Stewart cooking in the kitchen with Rao's from the world famous Rao's restaurant and I remember hearing about this lemon chicken.
Fast forward years later, and this is still one of my favorite ways to prepare chicken.
The simplicity of the dish not only makes this an easy meal, but the flavor is out of this world!
It's really simple, you're just going to make a quick lemon sauce, consisting of lemon juice, olive oil, spices, parsley, and a little red wine vinegar. Shake it up and that's it!
You can marinate the chicken in half the lemon sauce overnight if you prefer.
Depending on how much time I have available, I've actually taken this marinade and took a whole chicken, allowed it to marinate overnight, then I smoked the chicken the next day.
I tell ya, you have not lived, until you've tried smoked lemon chicken!
If you don't have a smoker then roasting it is the next best thing.
After 30 minutes under the broiler, I take the chicken and dip it in the lemon sauce, then I roast it for another 3-5 minutes.
Don't forget to take the remaining sauce and bring to a boil, then reduce to serve with the chicken for dipping.
I served my chicken with asparagus that was coated in the lemon sauce then roasted for about 10 minutes.
This dish is not only beautiful, it's beyond delicious!
Enjoy.

this sounds awesome. I have a WSM and would love to smoke this. How would you adjust the recipe and timing for a smoker?
ReplyDeleteThanks!
Hello Benjamin, 4 hours at 275 degrees.
DeleteThis sounds delicious! I am in an apartment and worry about broiling and causing smoke. How far away from the broiler is it placed? Could it be baked instead then broiled?
ReplyDeleteYou broil it on the middle oven rack. I am sure you can bake it, but the skin want have the same texture. You could also bake it, then broil it for about 5 minutes to help crisp up the skin.
