Cheesy Chicken Bread in a Basket

It's a beautiful Sunday and I wanted to create a simple, cheesy, treat for my family.

We're headed off to the park and what better to pack in the picnic basket then some Cheesy Chicken Bread in a Basket.

Wrap the finished bread in foil, and it will remain the perfect temperature for eating!


This is one easy dish, you start with a big loaf of French bread, hallow out the core and lightly oil the inside and out with olive oil.


Next, I browned up some chicken and veggies. Added a little mayo and sour cream.


 Add loads of cheese, stuff the mixture in the center of the bread basket and bake!


After about 20-30 minutes, you have created cheesy goodness!


I used French bread, but I often make this with Ciabatta.


Don't forget you can also substitute the chicken for shrimp, just reduce the saute cooking time to about 7 minutes. 

I love to garnish the bread with lots of green onions.


And you must serve this with a cold soda in the bottle made with real sugar.

I personally feel that  drinking a real soda just makes the sandwich taste that much better.

It's tradition in my family that this sandwich must include an ice cold soda in the bottle.


 It's time to eat people, this is a must make sandwich for your next picnic!

Cheesy Chicken Bread in a Basket

Prep Time:  20 Minutes
Cook Time: 45 minutes
Total Time:  1 hour 5 minutes
Serves 4-6

INGREDIENTS:

2 Boneless, skinless chicken breast cut into 1 inch pieces
1 loaf French bread
3 tbsp butter
3 tbsp extra virgin olive oil
1 cup onions, chopped
1 cup celery, chopped
1 cup green bell pepper, chopped
1 tbsp garlic, minced
1 tbsp creole seasoning 
1 tsp garlic powder
1 tsp onion powder
1 tsp black pepper
1 tsp dry mustard
1/4 cup Best Foods mayonnaise
1/4 cup sour cream
1 cup jack cheese, grated
1 cup sharp cheese, grated


Directions:

Hallow out bread, leaving about a 2 inch boarder around bread. Scoop out less than half a inch out of bread and set aside.

Season diced chicken with half of creole seasoning, garlic powder, onion powder and black pepper and set aside.

In a large skillet, melt butter olive oil and cook onions, celery, bell pepper, garlic for 5 minutes then season with remaining spices add chicken cook for 15 minutes.

Add tore bread filling to pan and saute for about 5 minutes.

Add dry mustard, sour cream and mayonnaise. Mix all together, then mix in all cheeses and blend until melted. Put chicken mixture into bread.

Put chicken on greased baking sheet. Bake at 350°F oven for about 20-30 minutes until golden brown on top.

Cut into slices and serve.
