Steak Fajita Sandwich with Caramelized Onions, Mushrooms, and Peppers

You already know after yesterdays BYOB, about my move, and the need to cook food this week that is quick, fast, and doesn't require the use of all my packed pots. 
 

I purchased some thin sirloin steaks, and marinated them in olive oil, Mexican chili powder and oregano, added a little cayenne for heat, and a little garlic powder, black pepper and creole seasoning. 


After cooking the steak in a little butter and olive oil, just a little butter, I promise, I sauteed my vegetables in the steak juice, yep, that is what makes this steak fajita sandwich so good. Although baby girl didn't get the meat, she had the flavor, when I made her veggie melt with these nice caramelized peppers and onions. I told you about her Vegan ways when I created her Gouda Veggie Melt.
 
 I know what your thinking, this looks so good, it makes you want to lick the computer screen, lol...

Steak Fajita Sandwich with Caramelized Onions, Mushrooms, and Peppers

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients:

1 lb. thin sirloin steak
1 stick of butter
country white bread
2 bell peppers, sliced
1 white onion, sliced
1 small container of mushrooms, sliced
1 tbsp. creole seasoning
1/2 tbsp. Mexican chili powder
1/2 tbsp. garlic powder
1/2 tbsp. dried Mexican oregano, crushed
2 tsp. cayenne pepper
extra virgin olive oil
pepper jack cheese
cheddar cheese

Directions:

Mix seasoning blend and set aside. Rinse steaks and pat dry. In a large bowl place steaks and about 4 tablespoons of olive oil, mix well. Season steaks with half of the seasoning blend and mix well.

You can allow steak to marinate for about 30 minutes if you have the time, are overnight. Heat a large skillet over medium high heat, add 1/2 stick of butter and 3 tablespoons of olive oil.

Cook steaks about 3-4 minutes on each side, depending on thickness and desired level of doneness preferred. Remove steaks from pan and repeat if necessary. Add remaining butter and more olive oil, saute peppers and onions for about 10 minutes, season with remaining seasoning blend.

Add mushrooms and cook about 5 minutes more. Toast bread, top with cheese, add hot vegetables, top with steak and a little of the pan juices and enjoy.
