Roasted Peppers and Goat Cheese Grilled Cheese




Don't forget, April is National Grilled Cheese Month and I've created another one of my favorites!

 
Roasted Peppers and Goat Cheese Grilled Cheese is a flavor explosion. Of course, I didn't stop with just one cheese, I had to include sharp cheddar cheese as well.

First, purchase a bunch of baby bell peppers. I got mine at Costco but I know most grocery stores sell them as well.

I used 8 medium sized ones, but if you happen upon smaller ones, double the amount.

Roast the peppers until slightly blackened on both sides.


Next, I assembled the sandwiches with crumbled goat cheese on the bottom bread, topped with the peppers, topped with sharp cheddar cheese, topped with the second bread.

Place a little olive oil and butter into a pan over medium heat, cook about 2-3 minutes until slightly browned and cheese melts.


 Look at what we created, this is a big bite of ooey gooey goodness!

Roasted Peppers and Goat Cheese Grilled Cheese

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 4

Ingredients:

8 baby peppers
8 slices Texas Toast Bread
8 slices sharp cheddar cheese
4 ounces goat cheese, crumbled
olive oil
butter
salt
pepper

Directions:

Preheat oven to broil, place rinsed and dried baby peppers in a oven proof dish, coat in a little olive oil, sprinkle salt and pepper and mix well.

Roast peppers about 10 minutes, turning half way through until slightly blackened. Remove from oven, cover with a towel to steam for about 5 minutes.

Peel skin off peppers if the peppers are large enough, seed and set aside.

To assemble sandwich, place goat cheese on bottom bread, top with 2 peppers, top with sharp cheese, top with top bread, repeat.

Place equal amounts of butter and olive oil in a pan over medium heat, place sandwich in pan and press down, cook about 2-3 minutes per side until sandwich is golden brown.
