Here's a little background on this sandwich.
This is a family favorite, my mother made this for me when I was a kid and I make it for my daughter. Well, actually my daughter makes it for me now, she's a pro at sandwich making, especially if it includes cheese!
Make sure you purchase some high quality bologna from your deli and have them slice it, deli thin.
Although I must admit, my mother used thick slices, so slice it how you like it!
Put a little olive oil in the pan, fry the bologna, you need to look for a crispy underside with a little blackness too it!
Yes, that crust brings out the flavor, not burnt, but just a little black.
Now, top the bologna with grated cheese and cover with a lid so the cheese melts.
Place the bologna on some sandwich bread with a little mayo, and bite into food goodness!
Look at the cheese people, it's so good!
You gotta make this, it only takes minutes, and you want be sorry!

Ingredients:
16 slices bologna, deli thin
8 slices of bread, country white
1 cup jack cheese, grated
1 cup sharp cheese, grated
extra virgin olive oil
mayonnaise
Directions:
Place about 1/2 tablespoon of olive oil in pan over medium heat, add bologna. Fry bologna for about 2-3 minutes per side until it's slightly crispy.
Place grated cheese in bologna and cover with a lid to melt.
Place meat on bread with a little mayo and enjoy.
This brings back childhood memories, bologna is also good fried for breakfast with grits and eggs. I haven't thought of making this for years, gotta go buy bologna

DeleteIf you cut a slit half way through, or cut a plus sign in the center, the bologna stays flat while cooking. I grew up on fried bologna sandwiches. Won't touch them today because of the amount of preservatives added. It was/is the best way to eat bologna tho, in my opinion.
ReplyDeleteThanks Teabeary, I don't like it flat because when cooking and it "blows" up is what I remember from child hood, I would be amazed at watching it get that big. Also, I believe Applegate farms sells organic bologna so you can still eat it.
