The wonderful people at Werther's Original was kind enough to send me a huge party kit full of free Werther's Original Baking Caramels to host a Werther's Original Baking Bash MommyParty!
I am so excited I can hardly contain myself. I have a love of Caramels that dates back to childhood, and to think, I am sitting here with a box full of my favorite treat!
I'm about to create some caramel based masterpieces people.
I started off by baking up a rich batch of brownies in a springform pan. I used this pan because I didn't want any rough edges on my brownies and also for the cake like appearance.
Don't forget to spray the pan with cooking spray before baking up the brownies.
After the brownies cooled completely. I took some softened vanilla ice cream and packed it in tightly on top the brownies. I am using the pan as a mold to hold all this goodness!
Next, cover the pan with saran wrap, pressing the saran wrap on top of the ice cream. Freeze the brownie/ice cream cake for a couple of hours to harden.
While the cake hardened, I prepared my caramel. Place the unwrapped baking caramels in a microwave proof bowl, add a little evaporated milk and in 2 minutes, you have creamy caramel.
Note: it's very important that you place the hot caramel on the bottom of the plate. Then put the brownie on top. What happens is the hot caramel, heats the brownie up and magic takes place.
You have bites of hot caramel, warm brownie and frozen ice cream. It's a party people...each and every bite...is pure joy!
Caramel Brownie Ice Cream Cake with Werther's Original
Prep Time: 10 minutes
Cook Time: 45 minutes
Total Time: 55 minutes plus freezing time
Servings: 6-8
Ingredients:
9 ounces Werther's Original Baking Caramels, unwrapped
2 tablespoons evaporated milk
1 box Ghirardelli brownie mix, baked according to directions
1 1/2 quart vanilla ice cream, softened
whipped cream
mint to garnish
9 inch springform pan
Werther's Original Chewy Caramels to garnish
Directions:
Bake brownies according to package directions. Allow to cool completely in pan.
Top brownies with ice cream, spread ice cream evenly throughout pan, packing tightly. Cover pan with saran wrap, pressing down on top of ice cream.
Place in freezer for about 2 hours to set up before serving.
To serve: add caramels and evaporated milk to a microwavable bowl, microwave for about 2 minutes are until caramel melts, stirring well.
Place around 1/4 cup of hot caramel on the bottom of a plate. Using a knife dipped in hot water and dried, cut through ice cream/brownie cake, repeat.
Place cake on top of hot caramel, top with whipped cream, mint, and a chewy Werther's original to garnish. Enjoy!
