Layers of Goodness!
I really had a great morning, and not just because this sandwich was magically delicious! I I must admit I am not a big fan of breakfast, I am more of a brunch girl.
I always try to figure out how to turn breakfast into brunch, and I hit a home run with this McMuffin sandwich.
First, you already know about my obsession with happy eggs! People, please buy great eggs. Next, you can't have a great McMuffin without the O.G. Thomas English Muffins, it's what I grew up eating, why break tradition!
Don't forget to fry up lots of bacon for this baby!
Finally, I always keep a big supply of Hormel Deli Meats in the fridge, they're delicious and all natural!
And you didn't think I would forget the cheese...loads and loads of cheese!
I love frying my eggs in ring molds, just sprinkle a little creole seasoning and black pepper to flavor them up! Fry the bacon first, then the egg and Turkey, why waste good bacon grease.Now, it's time to assemble our beautiful sandwich so we can eat!
I used three pieces of Muffins to make one sandwich...my take on a triple decker. Now, it's time to chow down...I just pressed the whole sandwich down with the palm of my hand, cut it in half, and smiled as I took a big bite!
Stuffed Turkey and Bacon Egg McMuffin Sandwiches
Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 4
Ingredients:
1 pack of Thomas English Muffins
8 slices bacon
8 slices of cheese
8 slices turkey
4 eggs
extra virgin olive oil
pinch of creole seasoning
pinch of black pepper
Directions:
Slice bacon in half. Add about 1 tablespoon of olive oil to a pan over medium heat. Add bacon and fry until crisp.
Remove bacon, reserve some of the bacon grease.
Add eggs, sprinkle with a pinch of seasonings and fry.
Fry turkey for about 2 minutes on each side.
Break muffin in half, toast muffins until golden and assemble. I used three pieces of muffin per sandwich, 1 egg and lots of bacon and cheese!
