Football Sausage Chili


Game Time!



Yes, I know I just made chili last week, but in honor of the start of the football season, it's CHILI TIME, again!

I always make a big pot of chili to start football season, Big Goo, and Baby Girl expects me to keep all food traditions, that I start!


I normally use ground turkey or maybe a little diced steak to make chili. But today, I wanted to create an extra special chili and I decided why not just use all Sausage....

This chili is so simple to put together. I just sauteed some onion, bell pepper, chipotle peppers and garlic, in a little olive oil.


Add all the sausage, casing removed, brown that up, pour in some beef broth, hot tomato sauce and a can of Hatch roasted chili. Add spices of course, and throw in some beans.

That's it, and this recipe can easily be made in a slow cooker.

After you brown the meat, throw everything into the slow cooker and allow it to cook on low for about 2-3 hours, high about 1-2 hours...you might want to reduce the broth by a cup if using a slow cooker.


It's time for some football and my chili is ready! Big Goo wants his bowl full of cheese, can't you tell!

Football Sausage Chili

Prep Time: 10 minutes
Cook Time: 30 minutes
Total Time: 40 minutes
Servings: 6 

Ingredients:

2 lbs. Johnsonville Italian Sausage, casing removed, hot or mild
1 white onion, diced
1 bell pepper, diced
2 chipotle peppers, diced
1 jalapeno, diced
3 cloves garlic, minced
6 ounces hot tomato sauce
4 ounces roasted hatch chiles  
15 ounces pinto beans, drained, rinsed
3 1/2 cups beef broth, low sodium
3 tablespoon of chili powder
2 tablespoon creole seasoning 
1 tablespoon garlic powder 
1 tablespoon onion powder
1 tablespoon ground oregano
1 tablespoon black pepper
extra virgin olive oil.
crackers, cheese, corn chips (optional)
green onions to garnish 

Directions: 

Mix seasoning blend and set aside. Chop vegetables and set aside. 

Add about 2 tablespoons of olive oil to a pot and heat over medium heat. Add all vegetables except garlic and cook for about 5 minutes. Add garlic and cook 1 minute more. Season vegetables with 1 tablespoon of seasoning blend and mix well.

Add sausage, brown for about 10 minutes, add 2 tablespoons of seasoning blend to sausage, mix well. 

Add hot tomato sauce, roasted Hatch chilies, broth, and remaining seasonings, mix well. 

Cook over medium-low heat, stirring occasionally for about 20 minutes. Chili will thicken upon standing.

Serve in a large bowl, topped with cheese, and crackers.

  1. Pinning this one! I switch up ground beef with sausage in many recipes but haven't thought about it with chili! Love this!!!
