Fajita Nachos with Grilled Steak and Chicken



Happy Labor Day!


Good morning everyone, I am so excited! Not only is it Labor Day, you still have 4 days left to enter the Cooking Planit T-Fal giveaway (entry below).

Since we're celebrating a holiday, I wanted to get outside and grill up some stuff. I decided chicken and steak is always a good option when it's grilling time!


I was undecided about what sides to cook with the steak and chicken, and I knew I was making fresh guacamole. And yes, I love Mexican food, so this really wasn't that hard in the end. Why not take all my ingredients and make nachos!


This is a really simple dish, I just marinated some chicken and sirloin steaks in chili powder, creole seasoning, black pepper, garlic powder, onion powder, oregano, lemon and lime, juice and zest and olive oil. 


After a few minutes under the broiler to melt the cheese, it's eating time!

Fajita Nachos with Grilled Steak and Chicken

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

1 lb. sirloin steak
1 lb. chicken breast, boneless, skinless
2 lemons, zested, juiced
2 limes, zested, juiced
1 tablespoon oregano, dried, crushed
1 tablespoon creole seasoning
1 tablespoon chili powder
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon black pepper
extra virgin olive oil
4 cups cheddar cheese, grated
4 cups jack cheese, grated
1 red onion, sliced
1 bell pepper, sliced
guacamole
fried corn chips
tomatoes
green onions
sour cream

Directions:

Preheat oven to broil.

Mix seasoning blend together and set aside.

Rinse chicken and pat dry, place into a bowl. Rinse steak and pat dry, place into a separate bowl.

Juice and zest, one lemon and one lime for each. Coat chicken and steak in about 2 tablespoons of olive oil and rub into skin. Divide the seasoning blend between chicken and steak and rub well. Marinate for 30 minutes if desired or head straight to the grill.

Grill chicken for 6-8 minutes per side, or until no longer pink and 165 degrees F. Grill Steak 4-5 minutes per side or until desired doneness.

Coat bell pepper and onion in a little olive oil and grill for about 5 minutes.

Allow chicken and steak to rest for about 10 minutes before chopping.

Place chips on a oven proof baking sheet. Top with cheese, chicken, steak, peppers, onions. Broil for about 5 minutes are until cheese, melts.

Top with guacamole, tomatoes, green onions and sour cream if desired.
