Italian Bacon Wrapped Meatloaf Sliders and Easy Greasy Giveaway



Day 5 of Sandwich Week!


It's Day 5 of Sandwich Week with Creole Contessa and I thought after yesterdays Pastrami, Bacon, BLT with Fried Egg that things couldn't get any better! I was wrong...not only have I created sandwich nirvana, with my Italian Bacon Wrapped Meatloaf Sliders, you still have about 2 hours to enter the Easy Greasy giveaway (entry at the bottom of page).


I decided to use two meats for this meatloaf, ground turkey and some mild Italian sausage.


The spice is everything! I created another wonderful seasoning blend to make sure our meatloaf is full of flavor.


I sauteed my bell pepper, celery, carrot, and a white onion. Added a little garlic and allowed the mixture to cool slightly. Added the cooked veggies plus some parmigiano reggiano and a beaten egg.

Don't forget to add in the softened bread/broth mixture. Mix well and bring on the bacon!


Lay bacon flat, slightly overlapping on the foil, sprinkle a little seasoning blend on the bacon. Place meat into the center of bacon, form a log and wrap bacon around the meatloaf. 


Top loaf with another piece of foil and flip over. Sprinkle seasoning on top of bacon, baste with barbeque sauce. Wrap back up and foil and it's oven time!


It's sandwich time and I have all the goodies...good cheese, Hawaiian rolls, lettuce, ketchup and my chilled meatloaf.

 
This meatloaf is beautiful, it's slices much easier if you allow it to chill overnight. Also a little trick, take the veggies and put them in a blender to chop them up do you see how I hid them in the meatloaf.


Finally, I pan fried my meatloaf in a little butter, just to crisp it up!


It's time to eat, and don't forget...if you happen to have a little extra cooked bacon around, it makes the perfect garnish for this bacon feast!

Italian Bacon Wrapped Meatloaf Sliders and Easy Greasy Giveaway

Cook Time: 1 hour 10 minutes
Total Time: 1 hour 35 minutes
Servings: 8

Ingredients:

1 lb. ground turkey
1 lb. Johnsonville Mild Italian sausage
1 lb. thick cut bacon
1 bell pepper, diced
1 stalk celery, diced
1 small white onion, diced
2 stalks green onions, diced
1 carrot, grated
3 cloves garlic
1 egg, beaten
1/2 cup parmigiano reggiano cheese, grated
2 slices of bread
1/2 cup chicken broth, low sodium
1/2 cup barbeque sauce
2 tablespoons creole seasoning
2 tablespoons garlic powder
2 tablespoons onion powder
1 tablespoon black pepper
1 tablespoon dried oregano, crushed
extra virgin olive oil
cheese
Kings Hawaiian rolls
butter


Directions:

Mix seasoning blend and set aside. Preheat oven to 400 degrees.

In a skillet over medium heat, add about 2 tablespoons of olive oil. Add celery, carrot, bell pepper, and white onion, saute for about 5 minutes, season with 1 tablespoon of seasoning blend, add garlic and saute 1 minute more. Remove from heat and allow to cool.

Tear sliced bread and add to a medium bowl, add 1 teaspoonful of seasoning blend and cover with chicken broth and set aside.

In a separate bowl, add ground turkey, sausage (casing removed), remaining seasoning blend, minus 1 tablespoon. Add beaten egg, cheese, cooled vegetables, green onions and bread/broth mixture. Mix well and set aside.

Place foil on a baking sheet, spray with nonstick cooking spray. Lay bacon slices down, slightly overlapping bacon. Sprinkle about 1 teaspoonful of seasoning blend on top of bacon. Add meat mixture in the center of bacon and form a log.

Wrap bacon up sides of meatloaf. Cover with another piece of foil and flip meatloaf over. Remove top foil and you should have a fully covered bacon meatloaf. Sprinkle remaining seasonings on top of bacon. Baste with barbeque sauce. Wrap meatloaf back up in foil.

Bake meatloaf for 45 minutes, remove foil from meatloaf and bake 20 minutes more. Broil for about 3 minutes on each side of meatloaf to crisp bacon. Remove from oven and allow meatloaf to rest for about 10 minutes before cutting.

To prepare sandwiches, use left over chilled meatloaf. Cut into slices. Place about 1 tablespoon of butter in a skillet over medium heat. Cook meatloaf about 3-4 minutes on each side or until golden brown.

Slice Hawiian rolls in half, place a piece of crisp lettuce on bottom, cover in ketchup, add meatloaf, cheese, and extra bacon if you have any leftover and serve.
