Pan Grilled Chipotle Steak and Eggs



The Road to Mother's Day Part II!


Day 2 of my Road to Mother's Day.  Yesterday I made a nice lite salad, well almost lite, minus the steak I topped it off with. The steaks were so pretty at the market I went back today and purchased more. Herein lies my take on Steak and Eggs.

And yes, I made my eggs heart shaped, it's Mother's Day people, you gotta show mom some extra special love on her plate.


This is another quick and simple recipe, take some steaks, rinse and pat dry, top with extra virgin olive oil, some of my extra special seasonings and then rub in some mashed chipotle peppers.

You can marinate these steaks overnight if you want, just make sure you bring them to room temperature before grilling.


Bring on the eggs!


I put a little olive oil and butter in a pan over medium heat, sprayed my cookie cutter with cooking spray, cracked the egg inside the cookie cutter and sprinkled a pinch of creole and black pepper on top.

Allow the egg to cook to your desired level of doneness and that's it!


Look at what we just created, I guarantee you, these steak and eggs will be, MOTHER APPROVED!


Pan Grilled Chipotle Steak and Eggs

Prep Time: 10 minutes
Cook Time: 15 minutes
Total Time: 25 minutes
Servings: 4 steaks

Ingredients:

4 New York Strip Steaks
4 chipotle peppers, mashed
2 tablespoons creole seasonings
2 tablespoons garlic powder
2 tablespoons onion powder
1 1/2 tablespoons black pepper
4 tablespoons extra virgin olive oil
4 eggs, sprinkled with a pinch of pepper and creole seasonings
butter
cooking spray and heart shaped cookie cutter

Directions:

Rinse steak and pat dry, top with olive oil and rub over both sides of steak, mix seasoning blend and season both sides of steak. Rub in 1 Chipotle pepper on each steak, covering both sides. Refrigerate steaks until ready to cook.

Bring steaks to room temperature, in a pan over medium heat or cast iron grill pan, add olive oil about 2 tablespoons. Place room temperature steak in pan and grill about 4-6 minutes per side, depending on your desired level of doneness and thickness of the steaks. I cook my steak around 5 minutes per side. Big Goo wants his steak cooked 6-7 minutes per side, which I find is overkill but hey, he like tough meat...lol.

Remove steaks from pan and allow to rest at least 10 minutes before serving.

In another pan over medium heat add a pat of butter and a little olive oil. Spray cookie cutter with nonstick cooking spray. Place cookie cuter in the middle of pan and crack a egg in it. Sprinkle top of egg with black pepper and a pinch of creole seasoning. Cook egg until desired level of doneness is achieved.

Place egg on top of steak and enjoy!
