Greek Chicken Sandwich Melt


 OPA!


I love the fresh flavors of Greek food, such as olive oil, oregano, feta cheese, lemon, thyme and I always add a little garlic.  I have incorporated all these flavors and more, into my Greek Sandwich Melt.

If you remember I made a Greek Chicken Club Sandwich, which was pure delicious! And in honor of National Grilled Cheese Day, yes, I know I am a day late, but it's never to late for a new grilled cheese sandwich, I created this melt.


I started off with fresh vegetables, sauteed in extra virgin olive oil, and seasoned with my special spice blend. After I sauteed my veggies, I then sauteed my marinated chicken breast. You can also grill the chicken and get that nice charred flavor, which is delicious!




I assembled my sandwich by adding mozzarella cheese, feta, and sharp cheddar. A fresh sliced tomato also gave the sandwich a nice clean taste. If you can find Greek Kasseri Cheese, use it. The store was out and Mozzarella was the next best thing. I pressed my sandwich using two pans, I know high tech, lol, but it works, if you have a panini press, use it and enjoy!

Greek Chicken Sandwich Melt

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

1 lb chicken breast, sliced about 1"
8 sliced country white bread
1 lemon, zested, juiced
6 cloves garlic, minced
4 tbsp. olive oil, plus more for cooking
1 small container of Greek yogurt
1 tbsp. dried Oregano, Crushed
1 tbsp. creole seasoning
1 tbsp. garlic powder
1 tbsp. onion powder
1/2 tbsp. black pepper
2 tsp. dried thyme
1 bell pepper, sliced
1/2 white onion, sliced
1/2 red onion, sliced
Mozzarella cheese or Greek Kasseri Cheese
Small container of Feta Cheese
Sharp Cheddar Cheese, sliced
Tomato to garnish

Directions:

Mix all spices and set aside. Rinse, pat dry and slice chicken, add to a large bowl. Add lemon juice and zest, Greek yogurt, garlic, olive oil and 1/2 of the spice blend. Mix well and refrigerate until ready to use.

Slice bell pepper and onion. Over medium high heat, add about 2 tablespoons of olive oil, saute veggies for about 5 minutes, season with remaining spice blend. Remove from pan and set aside.

Add more olive l and saute chicken until cooked, and no longer pink, about 6 minutes per side. Chicken can also be grilled.

Assemble sandwich, on one slice of bread, add mozzarella cheese, veggies, chicken, sharp cheddar, tomatoes and top off with feta cheese, place another slice of bread on top. 

In a medium skillet add olive oil over medium heat, place one sandwich and press down, I always use a pot to press my sandwich, flip sandwich when golden brown and repeat on the other side. Enjoy!
