Turkey Taco "Salad"

Turkey Taco Salad is one of my quick go to meals. In under 30 minutes you have a great tasting healthy meal.
























Fresh ripe tomatoes and chopped green onions are key to topping your turkey taco salad.


Putting the lettuce at the bottom of the taco shells, allows you to protect your shell from becoming soggy, keeping all the goodies from falling out the "salad."

Turkey Taco "Salad"

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 4

Ingredients:

1 lb ground turkey
1/2 white onion
3 cloves garlic, chopped
2 1/2 tbsp. taco seasoning (recipe below)
1 c. cheddar cheese, grated
1 c. jack cheese, grated
4 stalks green onions, chopped
lettuce, washed, dried
taco shells
sour cream
lime
tomatoes
cooking oil

Directions:

Chop onion and garlic, set aside. Add 1 tablespoon of cooking oil to large pot on medium high heat. When oil is hot add onion, brown for about 4 minutes, add garlic and brown 1 minute more. Add 1 tablespoon of taco seasoning and mix well.

Add ground turkey and break up, add 1 tablespoon of taco seasoning to ground turkey, cook for 10 minutes, add remaining tablespoon of taco seasoning and cook 5 more minutes.

To Assemble:

Put lettuce on the bottom of taco shells, add meat, cheese, tomatoes, green onions, dollop of sour cream.  Taco shells can be warmed or lightly fried until crisp.

Taco Seasonings Mix:

servings: 2 lbs of meat

1 tbsp. chili powder
1 tbsp. Mexican oregano
1 tbsp. onion powder
1 tbsp. garlic powder
1/2 tbsp. cumin
1/2 tbsp. black pepper
1/2 tbsp. paprika

Crush oregano between hands to release flavor, add remaining ingredients, mix well. Store in an airtight container.

Note: the taco recipe above will only use half of the taco spice blend.
