Double Pork Pasta w/ Chicken & Broccoli


Mama Mia!




I know what you're thinking, double pork pasta? Yes, Bacon and Genoa Salami they go great together.


Start with 6 slices of thick cut bacon, then cut it into strips.


Slice the Genoa Salami into strips as well.


Fry bacon first for about 5 minutes then add Genoa Salami and cook another 4-5 minutes.



Garnish with fresh Campari tomatoes that have been seeded.


Yes, It's time to eat, a forkful of porkness!

Double Pork Pasta w/ Chicken & Broccoli 

Prep Time: 10 minutes
Cooking Time: 30
Total Time: 40 minutes
Servings: 4

Ingredients:

2 boneless skinless, chicken breast sliced thin
8 slices genoa salami, sliced
6 sliced thick cut bacon, diced
3 tbsp. butter
3 tbsp. extra virgin olive oil
1 lb broccoli
1 red onion, diced
4 cloves of garlic, minced
1 c. chicken broth
1/2 tbsp. onion powder
1/2 tbsp. garlic powder
1/2 tbsp. italian seasoning
1/2 tbsp. seasoning salt
2 tsp. black pepper
2 tsp. paprika
1 lb of pasta of your choice
campari tomatoes to garnish
parmesan cheese to garnish

Directions:

Bring pasta water to boil, cook pasta 9 minutes or until al dente. Drain pasta coat with a little olive oil to prevent sticking. Add broccoli to pasta cooking water, cook for 3 minutes remove and shock in ice cold water.

Season chicken with all spices and set aside.

Add 1 tablespoon of olive oil to large skillet on medium high heat. Add bacon and fry until crispy, add genoa salami and cook about 3 minutes more. Remove and set aside.

Add butter and remaining olive oil, heat over medium high heat. Add chicken and saute for 10 minutes, remove chicken and set aside.

Add onion to pot and saute for 3 minutes, add garlic saute for 1 minute more.

Add chicken broth to skillet, bring to a boil, then put on simmer, add chicken back into the pan. Add pasta to pan and toss well.

Chop broccoli into florets, add to pan, add bacon and genoa salami.

Garnish with seeded campari tomatoes and parmesan cheese. Enjoy
