Smokey “Fried” Creole Turkey Salad Sandwich

Not Your Mama's Turkey Salad




Yesterday was Thanksgiving and like me I am sure you have a lot of left over Turkey.  I smoked my Turkey in my new turkey smoker for the first time ever. And yes it was very cold outside.




The turkey came out excellent, this is what I have left over and I have to do something with it. I was thinking soup then I said to myself why not just make a turkey salad. Quick, easy, and one bowl just like I like it.

Add plenty of chopped pecans for crunch.


Dice up all the veggies, and put everything in the bowl and stir.


Yes it is that simple.



Fried Turkey skin is the key to this dish. Fry it, drain it, dice it. Then put it in the bowl also, and your done. Less than five minutes is all it takes for this turkey salad. Yes, it is turkey crackling.

 


Don't forget the fresh lettuce.


 
And for sure not the tomatoes sprinkled with a little creole seasoning and black pepper




Pile the salad high as you like it on top of the lettuce and tomaotes.

Smokey “Fried” Creole Turkey Salad Sandwich

Prep Time: 10 minutes
Cook Time: 5 minutes
Total Time: 15 minutes
Servings: 4

Ingredients:



3 cups smoked holiday turkey shredded
Turkey Skin (yes that's right)
½ c. diced pecans
½ c. mayonnaise
1 tsp. pepper
1 tsp. creole seasoning
½ tsp. garlic powder
½ tsp. onion powder
¼ c. green onions
¼ c. white onions
8 slices of country bread
8 slices tomato
8 slices of romaine lettuce
2 tbsp extra virgin olive oil

Directions: 



In a large bowl mix shredded turkey with pecans, mayonnaise, onions, creole seasoning, pepper, garlic powder, onion powder and set aside. Fry turkey skin in hot oil until crisp. Drain turkey skin then dice into small pieces. Add to turkey mixture, stir and serve.
