Pecan Coconut Granola

If you're like me then every time you see granola you want it!

What I don't want is the high cost of purchasing granola and the fact that it's just not as fresh or as cost effective as making it yourself.

When the wonderful people at Zulka Morena® Pure Cane Sugar reached out to me for recipe development my first thought was, why not granola?

I wanted a granola that was full of coconut, cranberries and loads of pecans.

It's a really simple process, you mix all the ingredients together in a bowl, minus the dried fruit and bake for about 20-25 minutes, stirring every 5 minutes to brown evenly.

Allow the granola to cool for about 30 minutes, then stir in the dried fruit.

Granola is very forgiving so add as much nuts and dried fruit as your heart desires.

I've decided that I want to become a granola making mama after this batch turned out perfectly.

My family decided that my granola taste way better than store bought, and all the pecans just made it even more delicious.

With this easy to make recipe, no more excuses people, start granola making today and don't forget to make it your own by using whatever nuts and dried fruits that you enjoy.

Enjoy!

    1. Sorry to hear that Bec, you can use vegetable oil instead of the coconut oil. I would replace the coconut with sunflower seeds for a crunch.
