Kicked Up Bacon Pork and Beans





I love beans, especially baked beans. I wanted to take my favorite barbeque baked beans and put a new spin on them. You guessed it, add more bacon.

Yes...these beans are not only smokey, they have super bacon characteristics.

This dish goes together in a matter of minutes with the addition of canned baked beans, pre cooked bacon and prepared barbeque sauce.


Step 1, Preheat oven to 375 degrees F. Chop up half a red and green bell pepper, celery, green onion and garlic.

In a pan over medium heat, add olive oil, precooked bacon, all the vegetables, except the garlic, and saute 5 minutes.

Add garlic and seasonings and saute 1 minute more.


Step 2, transfer mixture to a greased casserole dish. 


Step 3: Pour prepared barbeque sauce over beans and mix well. Cover beans with foil and bake for 25 minutes.


Step 4: Remove foil, turn oven to broil, and broil beans for 5 minutes more.


The beans are piping hot and ready to serve.


Serve beans over hot rice and enjoy!


Kicked Up Bacon Pork and Beans

Prep Time: 5 minutes
Cook Time: 25 minutes
Total Time: 30 minutes
Servings: 4-6

Ingredients:

2 (15 ounce) cans of VanCamp’s pork & beans
6 slices precooked bacon, diced
1 teaspoon black pepper
1 teaspoon of creole seasoning or seasoning salt
1 teaspoon garlic powder
1 teaspoon onion powder
3 cloves garlic, chopped
½ red bell pepper, diced
½ red green pepper, diced
1 stalk celery, diced
2 green onion, diced
2 tablespoons extra virgin olive oil
1 cup prepared barbeque sauce
Cooked hot rice

Directions:

Preheat oven to 375 degrees F.

Dice vegetables and set aside. In a skillet add olive oil over medium heat, add all the vegetables, except garlic. 

Add precooked bacon and sauté for 5 minutes, add garlic and sauté 1 minute more.

Add all the seasonings and mix well. Toss in pork & beans and mix well.  

Transfer mixture to a greased casserole dish.  Pour prepared barbeque sauce over beans and mix well.

Cover casserole dish with foil. Bake at 375 degrees F for 20 minutes, remove foil and broil for 5 more minutes. 

Serve over hot rice and enjoy.
