Famous Daves Cornbread Muffins Copycat

It's Copycat Friday and boy do I have the perfect copycat recipe for you!

Famous Dave's, let me explain people...this is the best barbeque hut, yes...hut, I've ever had the pleasure of eating at!

And this is saying  a lot, because Big Goo makes some of the best ribs in the world.

I love my Big Goobie Ribs, I really do, his sauce is delicious and I'll admit, I could drink Big Goo's sauce!

But...yes...I said...but, Famous Dave's is like Barbeque heaven.

 
The ribs, the wings, the pulled chicken sandwich, the beans, oh...the beans!

Famous Dave's doesn't stop there, they decide to take things to another level with non other then a buttery, sweet, cornbread muffin!

 
This is NOT, your mama's cornbread muffin, this muffin is like a piece of cornbread cake, yep, cake.

It's the perfect amount of sweetness just to make you think you've been served a free dessert!


I've said enough people, you can make my copycat version, or hit up Famous Dave's and eat a slab of ribs for me, and don't forget your muffins!


Famous Dave's Cornbread Muffins Copycat

Prep Time: 5 minutes
Cook Time: 20 minutes
Total Time: 25 minutes
Servings: 12 muffins

Ingredients:

2 boxes Jiffy cornbread mix
2 eggs
2/3 cups milk
1 1/2 sticks butter, unsalted
3 tablespoons sugar
cooking oil

Directions:

Preheat oven to 400 degrees.

Melt 1 stick of butter and set aside.

Use muffin inserts are spray muffin pan with nonstick cooking spray.

Place 1/2 teaspoon of cooking oil into each muffin insert.

In a large bowl, add cornbread mix, 2 tablespoons of sugar, eggs and milk, whisk well. Whisk in butter, nonstop for about 30 seconds. Allow mixture to rest about 5 minutes.

Fill muffin tins with 1/4 cup of batter. Tap down lightly against counter. Sprinkle remaining sugar on top of each muffin.

Melt remaining butter.

Bake at 400 degrees for 20 minutes. Remove from oven. Baste with remaining butter and serve warm.
