Spicy Thai Shrimp and Broccoli



I am in a big rush today, and when I need to cook a quick meal that's full of flavor, I always turn to Asian food!


I love cooking foods that have lots of vegetables because I can easily change the taste of a recipe by switching out the veggies.

For this dish I am using broccoli, but I've made my Spicy Thai Shrimp and Broccoli with zucchini, butternut squash and spinach...all giving the final dish a different taste, but still full of flavor!


I started off by sauteing carrot and garlic in a little extra virgin olive oil.


Next, I added my broccoli and some of the stems to the carrot mixture and cooked that for about 1 minute.

Added a little broth, covered the pan and steamed it for 2 minutes more.


While the broccoli steamed, in another pan I sauteed shrimp in olive oil for about 2-3 minutes on each side. 

I left some tails on for presentation but you don't have to do that...it interferes with quick eating...!

Finish off the broccoli with the spicy sesame chili paste oil and toss in the shrimp. 



Done...yes it was that quick. Less than 15 minutes. I like to serve this with hot rice or noodles!


I highly suggest you double this recipe. I would say this serves around 2 people, 1 if you're really hungry!


It's time to eat, I need some Lumpia egg rolls to bring me some crunch with my shrimp!

Spicy Thai Shrimp and Broccoli 

Prep Time: 5 minutes
Cook Time: 15 minutes
Total Time: 20 minutes
Servings: 2

Ingredients:

1 large broccoli floret
1/2 cup grated carrots
1/2 lb medium shrimp, peeled, deveined
2 cloves garlic, minced
1/4 cup chicken stock
1 tablespoon sriracha
1 tablespoon Thai red chili paste
1 teaspoon sesame oil
1 teaspoon black pepper
1 teaspoon Slap Ya Mama seasonings
1 teaspoon garlic powder
1 teaspoon onion powder
extra virgin olive oil
pinch of crushed red pepper
hot rice or noodles

Directions:

Mix seasoning blend together and set aside.

Mix chili paste, sauce, and sesame oil together and set aside.

Rinse broccoli, cut into florets, bite sized, slice up some of the stem, and set aside.

Rinse, peel, devein shrimp and place in a bowl, coat with 2 teaspoons of seasoning blend and mix well, set aside.

In a medium pan add about 1 tablespoon olive oil over medium high heat, add carrots and garlic and saute 1 minute.

Add broccoli, mix well, season with remaining seasoning blend, reduce heat to medium low, mix well, add broth, cover with lid and steam for about 2 minutes.

In another pan over add 1 tablespoon of olive oil over medium heat, add shrimp and saute for about 2 1/2 minutes on each side.

While shrimp cook, remove lid from broccoli, add chili oil mixture, stir and mix well.

Toss in cooked shrimp, and serve over rice or noodles.

Sprinkle crushed red pepper if desired.
