Pastrami Bacon BLT with Fried Egg and The Easy Greasy Giveaway



Day 4 of Sandwich Week!


Can you believe it people, it's Day 4 of Sandwich Week with Creole Contessa!  It's also your last day to enter the Easy Greasy giveaway (entry at the bottom of page).  My brain is in full sandwich mode, and this Pastrami Bacon BLT with Fried Egg...yes...with Fried Egg is da bomb!


While I baked my bacon, I fried the pastrami in a little olive oil to crisp it up a bit. 


After the bacon was cooked, I reserved the bacon grease...Yep...sure did...what else would I fry my eggs in. Don't forget to sprinkle a little black pepper and creole seasoning on those eggs. Flavor is everything people...! 


Assembly TIME! Lightly toast the bread, spread a bunch of Best Foods mayonnaise on the toasted bread, top with lettuce, then tomatoes...the method to my madness is placing the lettuce first then tomatoes, keeps our bread nice and toasty, now top the tomatoes with the bacon...the bacon is going to warm the tomatoes, while flavoring them with bacon juices...yes..it's about to get even better people.

Top the bacon with the cooked pastrami, and finally top the cooked pastrami with the fried egg...don't forget, we have another piece of bread, lathered with more mayonnaise!


It was totally worth the layering effort!  Don't worry, after one try, you'll be a BLT making pro.


Now, don't be scared...if you dare...stack the sandwich up and try to eat it like this....lol...Oh...don't forget the ice cold coke in the bottle...Let's EAT!

Pastrami Bacon BLT with Fried Egg and The Easy Greasy Giveaway

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Servings: 4

Ingredients:

1 lb. center cut bacon
1 lb. pastrami, sliced
4 eggs
8 slices country white bread
2 tomatoes
butter lettuce
Best Foods Mayonnaise
black pepper
creole seasoning
extra virgin olive oil

Directions:

Preheat oven to 375. Line a baking sheet with foil, place bacon on sheet and bake for about 17 minutes, until bacon is nice in crisp.

While bacon cooks, in a skillet over medium heat, add about 1 tablespoon of extra virgin olive oil and fry pastrami for about 3-4 minutes per side are until a little crispy.

Slice tomatoes, rinse lettuce and pat dry. Sprinkle with a pinch of black pepper and a pinch of creole seasoning and set aside.

Toast sandwich bread if desired.  Remove bacon from oven, transfer bacon to a napkin to remove the excess grease. In a skillet over medium heat, add bacon grease from pan about 1 tablespoon, crack eggs into pan, sprinkle with a pinch of creole seasoning and black pepper. Fry egg for about 2 minutes per side. Remove from pan and assemble sandwich.

To Assemble sandwich, take 1 slice of toasted bread and spread with mayonnaise, top with lettuce, then tomato, bacon, pastrami and finally the fried egg.

Spread second slice of bread of mayonnaise and top. Enjoy!
