Comfort Food!

Today's dinner is perfect for a celebration! I made my Creole Salisbury Steak with Mushroom Gravy. Which is Big Goo's favorite dinner to eat!
This dish is really comfort food at it's best! I start off my sauteing my veggies in a little olive oil. Allow the veggies to cool slightly, then mix them in with the ground turkey, some spices and a beaten egg.
I do have one big secret, and you're the first to know it. Even Big Goo doesn't know my food trick. I take Kings Hawaiian dinner rolls, soak them in a little broth, and add it to my ground turkey. The Hawaiian bread adds a nice, slightly sweet flavor to the Salisbury Steak and goes perfect with the mushrooms.
After we mix all the goodies with the ground turkey, we form them into oblong shaped "steaks" and dust them lightly in flour.
Next, fry the Salisbury Steak in a little olive oil for about 5 minutes per side. Place on a plate and set aside while we create the gravy.
All the meat goodies from the Salisbury Steak is on the bottom of this pan. Add a little more olive oil if needed, saute the reserved veggies and mushrooms and then pour in the beef broth. Bring mixture to a boil and add the steaks back to the pan.
Allow the steaks to simmer in the gravy for about 15 more minutes.
It's time to eat people! I decided after I ate half of my Salisbury Steak, that I probably should have created a side dish...lol...Big Goo will be making his own sides tonight because I am full.
Creole Salisbury Steak with Mushroom Gravy
1
lb. ground turkey
1
large red onion, diced
½ bell
pepper, diced
1
stalk celery, diced
½ cup
Italian parsley, chopped
½ bunch
green onions, sliced
1
cup mushrooms, sliced
4
cloves garlic
4 Hawaiian dinner rolls, tear into pieces
3 cups beef broth
1
egg, beaten
¼ cup
flour
2 tablespoon cornstarch
1
tablespoon creole seasoning
1
tablespoon garlic powder
1
tablespoon onion powder
1
tablespoon black pepper
Pinch
of cayenne pepper
Extra
virgin olive oil
Directions:
Mix
seasoning blend together and set aside. In a medium bowl add tore dinner rolls and
cover with ½ cup of beef broth and 1 teaspoonful of seasoning blend.
Mix red
onion, bell pepper, celery, Italian parsley, and green onion together in a
bowl. Reserve ½ cup of vegetable mixture and set aside.
Heat 1 tablespoon of
olive oil in skillet over medium heat, add remaining bell pepper, onion, celery,
Italian parsley and green onions, sauté for about 5 minutes, season with 1
teaspoon of seasoning blend, and add 2 cloves of chopped garlic and sauté for 1
minute more. Remove from heat and allow
to cool slightly.
Add ground turkey to a large bowl, add eggs, and soften bread,
cooled vegetables and all remaining seasonings minus 1 tablespoon. Mix well and
form into 4 oblong shaped patties.
Add 2
tablespoons of olive oil to a pan over medium heat. Coat patties lightly in
flour, add to pan and cook for about 5 minutes per side. Remove from pan and
set aside.
Add 1 tablespoon of olive oil to pan over medium heat, add remaining
bell peppers, onions, celery, mushrooms and parsley. Sauté for about 5 minutes,
add garlic and seasonings, and sauté 1 minute more.
Add about 1 tablespoonful
of cornstarch, whisk well.
Add broth, bring mixture to boil, reduce heat and
simmer for about 5 minutes. Add patties to gravy and allow to simmer, covered
for 10-15 more minutes. Enjoy!
Yum, why does your food always look so good?! Could i make this using another type of bread?

DeleteMade these last night! YUMMY! I followed directions to a T, but my gravy was a bit thin :( Made more roux and added - perfection! Definitely adding to my rotation! Mixing the sauteed veggies into the meat made them so moist. LOVE!
ReplyDeleteI so glad you enjoyed them...I am like you, I like my gravy a little thicker, my hubby on the other hand wants his gravy thin...I am finding that sauteing the veggies is the key when I make things with ground turkey. Even when I do my turkey burgers I love to saute the veggies first, now that I have a second opinion I will keep doing it that way...lol
DeleteI made this last night and it was absolutely wonderful!!! I do have to admit that due to my inability to look at packaging closely I accidentally got ground chicken rather than turkey and yet they still came out wonderful (other than the thin gravy). The sweetness of the bread paired with the spice from the cayenne and black pepper was a great blend. I liked this recipe so much that I wouldn't mind making it again tonight! I will be following your blog from here on out. GREAT RECIPE!

My daughter made a second batch and I forgot to increase the cornstarch...I just asked my daughter, did we adjust the recipe since you wanted more gravy. She just looked at the recipe and said you need 2 tablespoons of cornstarch, not one...That's why the gravy came out a little loose...sorry about that...I was about to recook the recipe to find the issue...I am the gravy queen...and to thin gravy can't happen!
