Toasted Coconut Pineapple Frozen Yogurt

It's Day 3, and I am so lucky to still be cooking with Chobani!  The great people at Chobani sent me some wonderful yogurt, and I've been having a good time creating new recipes that include one of my favorite ingredients, yogurt!


 
I decided I wanted to create a creamy vanilla frozen yogurt, not only did I want vanilla frozen yogurt, I wanted to add two more of my favorite ingredients which included toasted coconut and sweet pineapple chunks. 


 
This recipe is really simple, all you have to do is take Chobani yogurt, mix in a little pineapple juice, sugar, and vanilla.  

Whisk the ingredients well and chill for about 1 hour in the refrigerator.



Pour this mixture into  your ice cream maker to churn for about 20 minutes. Add in the toasted coconut and pineapple, churn for 5 minutes more.

Transfer mixture to an airtight covered container and freeze for about 1 hour or until mixture is the texture you desire.

 
After I scooped my Toasted Coconut Pineapple Frozen Yogurt into a bowl I topped it with more pineapple and toasted coconut.


Doesn't this look really delicious!

Toasted Coconut Pineapple Frozen Yogurt

3 cups Chobani Vanilla Non-Fat Greek Yogurt
3/4 cups sugar
1 cup pineapple juice
1 teaspoon vanilla extract
1/2 cup shredded coconut
1/2 cup diced pineapple chunks
ice cream maker


Directions:

In a medium bowl, mix Chobani Greek Yogurt, sugar, pineapple juice and vanilla extract. Whisk well, refrigerate for 1 hour. Pour yogurt ingredients in your ice cream maker.

Make sure you put ice cream maker bowl in the freezer 24 hours before making ice cream. Allow ingredients to churn for about 20 minutes.

Add coconut to a skillet over medium heat, stir constantly until golden brown about 5 minutes and allow to cool. Add coconut and pineapple chunks after 20 minutes and churn 5 minutes more.

Transfer mixture to an airtight covered bowl and freeze for about an hour or until the frozen yogurt is your desired consistency.

Scoop and top with extra coconut and pineapple if desired. Enjoy!
