Sriracha Fish Sticks


Spicy, Crispy, Good!


Who doesn't love a nice, spicy, crispy, fish stick? I am not talking about "fish sticks" you find in the frozen section in the grocery store, that often doesn't resemble fish at all.

I am talking about fresh fish sticks, that are made of all fish, marinated in a sriracha seasoning blend, coated in crispy panko bread crumbs, and fried to golden perfection.


When you realize how simple it is to prepare fish sticks from scratch, you will never purchase frozen ones again.

You simply take your favorite fish, I am using white fish, cut it lengthwise, top with my special seasoning blend and a little bit of sriracha, mix well and that's pretty much it.

Your going to create a dredging station of flour, eggs, and panko all seasoned well. Fry for 3-4 minutes per side, it's that simple.


I like to drain my fish sticks on paper bags, just for the old school feel...then transfer to a cooling rack to prevent fish from losing it's crispy texture.


I also garnish each fish stick with extra sriracha.


I then dip them in sweet and sour sauce and even more sriracha....I can't help it, I just love the spice!

Sriracha Fish Sticks

Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Ingredients:

3 white fish fillets
3 tablespoons sriracha sauce
3 eggs, beaten
1 cup flour
1 1/2 cups panko bread crumbs
1 tablespoon black pepper
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon creole seasoning
2 teaspoons paprika
1 teaspoon cayenne pepper
cooking oil
sweet and sour sauce to dip
sriracha to dip

Directions:

Mix seasoning blend and set aside. In 3 separate bowls, place panko, flour and beaten eggs. Add 1 tablespoon of seasoning blend to each bowl, and mix well.

Add 1 tablespoon of sriracha sauce to the beaten eggs and mix well.

Slice whitefish lengthwise, then slice in half, you should get four fish sticks out of each white fish. Season whitefish with remaining seasoning blend, sriracha, mix well and set aside.

Heat oil in a pot over medium heat. Remember to not fill the pot over half full with oil to prevent spills. Heat oil to 350 degrees.

To prepare fish sticks. Take fish sticks and place in flour, lightly flour fish sticks then place in beaten eggs, allow excess egg mixture to drip off, finally place in panko and press panko into the fish sticks, coating both sides well. Place fish sticks on a tray and repeat.

Place fish sticks, about 5 at a time, into hot oil and cook for about 3-4 minutes on each side or until fish is nice and golden brown. Repeat.

Drain on paper towels then transfer to a wire cooling rack so fish remains crispy.

Serve with sweet and sour sauce and extra sriracha.
