Chocolate Covered Strawberries

Hello everyone, happy belated Mother's Day to all the moms. I would have posted yesterday but I was busy, grilling and chilling and eating, all day.... By the way, a shout out to Big Goo for giving me a new charcoal grill for Mother's Day.


Last year, I received a whole bunch of tools for Mother's Day, which I just loved. I am not sure if I mentioned that I love to build stuff and tear stuff apart. Yesterday, yep on Mother's Day, while I was grilling and chilling, lol, I built two raised planters and a table.

Now, if only I could finish the greenhouse...Say hello to carrots and lettuce. That's the color I painted them. I am finishing off "tomatoes" today. I have one more raised bed to build. I made these out of cedar. I got this plan from the other great tool toting mamma Ana-White. I am going to cover them with a hoop house and fabric to protect my veggies from the elements.


Back to the strawberries, LOL....I  was so into my raised beds, I almost forget what this post was about. Well, my Baby Girl bought me these big, juicy, stem-on, strawberries, for Mother's Day. I decided to create some chocolate covered strawberries, because hey, I love chocolate and I love me some strawberries.


I also love coconut oil, I use it pretty much on and in everything, cooking, baking, on my skin as lotion, in my hair as conditioner. I use it weekly for a hot oil treatment for my hair. I added it to the chocolate because I wanted a crackle when I ate the strawberries.

If you don't like coconut, use canola oil. If you like almond joy candy bars then use the coconut oil because that is what the chocolate tasted like. You can also use neither and they will still taste fantastic!


I placed the chocolate and coconut oil over a double broiler.


Just simmer and stir until the chocolate melts.


Dip the strawberries, place on a saran wrap lined cookie sheet. Let them set up in the refrigerator for a few minutes.


Look how beautiful they turned out. Those are my baby roses in the background.


They taste even better, and look they cracked. Talking about YUM!

Chocolate Covered Strawberries

Prep Time: 5 minutes
Cook Time: 10 minutes
Total Time: 15 minutes
Servings: 12 strawberries


Ingredients:

12 large strawberries, stem on, washed, dried
1 cup milk chocolate chips
1 1/2 teaspoon coconut oil or canola oil

Directions:

Line a cookie sheet with saran wrap. Wash and dry strawberries. Place chocolate and coconut oil in a bowl, atop a double broiler over simmer. Stir until chocolate melts. Dip strawberries and place on cookie sheet. Allow strawberries to set up before eating. I place them in the refrigerator to speed up this process.
